Egg White Florentine

If you wait until just before work to prepare this, you’ll be in a time crunch. I would make it on Sunday morning and then save any leftovers for breakfast during the week.

Ingredients:
4 Egg Whites
1 Whole Free Range Egg
½ c. Spinach (lightly steamed)
½ c. chopped peppers and onions
¼ c. water chestnuts, chopped
¼ c. mushrooms
¼ c. skim milk
3 tbl. Low fat cheese (Monterey Jack is good)
¼ tsp. nutmeg
Salt and pepper to taste

Directions:
Set oven to 375. Mix all together, spray small baking pan with olive oil spray. Bake until egg whites are cooked through about 10-15 minutes. You can make a double batch if you don’t have a small enough pan.
