Help Me Perfect My Amateur Healthy Salsa Recipe

If you’ve worked with me for any length of time, you know that I have a tendency to sort of throw things together at the last minute.  A lot of my close pals know this about me all too well.  Usually I have a concept floating around in my head for a while and then one day…BAM, I go for it.

Such is the way it was for the delicious salsa I made this weekend.  Although I’d been thinking about creating my own salsa for a while, I never even attempted it until yesterday.  I decided upon the ingredients while shopping at my local grocery, and now I’d like you to try it out and make it even better.  If you decide to take the challenge, you could leave your modifications as a comment, or even send it to me via email.

I will admit now that one of my reasons for doing this is laziness.  I want the recipe to be perfected but I don’t want to do any research into making salsa.  In fact I don’t want to think about it much more than I already have.  So I BEG YOU, pleeaassee send me your modifications!

Ingredients:

  1. 2 8 oz. cans Hunts Fire Roasted Tomatoes diced
  2. 2 medium sized Heirloom Tomatoes chopped
  3. 1 8 oz. can organic black beans, drained
  4. 1 8 oz. can organic sweet corn, drained
  5. ½ medium white onion, finely diced
  6. 1 medium jalapeño pepper, seeded and finely diced
  7. ½ lime
  8. ½ bushel chopped cilantro

Directions:

  1. In a medium sized glass bowl, empty both cans fire roasted tomatoes.
  2. Add chopped heirloom tomatoes (optional to puree tomatoes before adding)
  3. Add beans, corn, onion, jalapeño, & cilantro
  4. Squeeze lime over the top of everything
  5. Mix thoroughly and report back to JesReynolds.com

So there you have it.  Try it out and let me know what you think!  The secret is in the jalapeño if you ask me.
